how to find out if the cake is done

1. it should look done, as brown as you would expect it to be, and only wobbly in the middle if that's how it's meant to be.

2. it may well have shrunk back from the sides of the tin slightly.

3. if you prod it gently, it should feel like a firm bathsponge and the dent you make with your finger should spring back.

4. if you insert a skewer, cake tester or the blade of a knife into the middle of the cake, it should not have uncooked cake mixture sticking to it when you pull it out.

how fiddly is it?

* means the recipe is not at all fiddly.

** means it takes a little more time and trouble but worth it.

*** means quite fiddly but definitely worth it.

**** means very fiddly but possibly worth it.

***** means don't go there.
