I shall have to remember to look out for T45 next time I buy any flour there. Apart from my neighbour you are the only other person I have heard of that has used sponge flour and I can hardly believe I wasn't aware of its existence. I've seen reports of surveys over the years which say that lemon drizzle is the UK's favourite cake (OK, not all of the surveys agree) and I can really understand that. I don't make many cakes these days but during my years of serious cake baking I used sponge flour quite often in lighter-style cakes and I like to think it made a difference, if only because it cost me more than ordinary flour. Interestingly, it starts of with 175g of butter and sugar too, uses three eggs, but the flour weighs in at 250g plus there are 400g of dried fruits added. the finished bake cuts into 24 pieces - tastes nice when freshly made, but even better after a couple of days.
