I made a variation of your recipe this afternoon and put it in the oven, wondering why there wasn't as much mixture as you'd suggested. It took me nigh on 5 minutes to realise that I'd not added the eggs!! I took the "cake"out of the oven, whisked the eggs and folded them into the still slightly warm mixture and put it back to bake. Really good. I do turn to yoghurt cakes for a simple and reliable cake when I'm short of time (well, that's always). They tend to keep well, too. I've often used liners for loaf tins and they're so pleasingly easy but the last lot that I bought were a bit too cheap and they seem to want to stick to everything. I suppose you get what you pay for.
